Join us at 4pm on Friday 10th July for the second in the Fakeaway Fridays series hosted by Healthy Lifestyles Gloucestershire. We will be making Chicken Katsu Curry, a famous favourite from Japan designed with a European influence. Although traditionally a meat dish, there are a few simple swaps to make a vegetarian version that is just as delicious, and help you get those all important 5-a-day.

This makes four servings, so feel free to reduce quantities as needed.

50g plain white flour

75g Panko Breadcrumbs (Asda stocks this!)

2 large Eggs, lightly beaten

4 medium Chicken breast, skinless, raw / Veggie: any mix of - Aubergine, Butternut Squash, Sweet Potato cut into ½ cm slices

Calorie controlled cooking spray

70g rocket

100g ginger Yutaka Sushi Ginger

9g medium Curry Powder

1 tbsp plain white flour
