We will be making Chicken Katsu Curry, a famous favourite from Japan designed with a European influence. Although traditionally a meat dish, there are a few simple swaps to make a vegetarian version that is just as delicious, and help you get those all important 5-a-day.
This makes four servings, so feel free to reduce quantities as needed.
50g plain white flour
75g Panko Breadcrumbs (Asda stocks this!)
2 large Eggs, lightly beaten
4 medium Chicken breast, skinless, raw / Veggie: any mix of - Aubergine, Butternut Squash, Sweet Potato cut into ½ cm slices
Calorie controlled cooking spray
100g ginger Yutaka Sushi Ginger
1 medium Onion
Root Ginger, 1 inch slice(s), peeled and grated
1 large Garlic, crushed
9g medium Curry Powder
1 tbsp plain white flour
1 Chicken stock cube(s) (for 400ml stock) / Veggie: vegetable stock
½ tbsp Soy Sauce
2 tsp clear Honey
